This pizza is simple and not fussy and uses some left over or prepared components to make it quicker and easier. You can use chicken or turkey, or leave it out. This was a nice lunch, for us.

- 1 rectangle or round loaf focaccia(herbed, if possible), sliced horizontally
- 2 cups fresh baby spinach(I didn't bother to chop it)
- 2-3 green onions, diced
- about 4oz fresh mushrooms, sliced
- about 1 cup Sun Dried Tomato Pesto(purchased or homemade, or, you could use a traditional basic pesto, too, if desired)
- 4 pieces bacon, chopped and fried crisp
- about 1 cup cooked chicken or turkey
- 4-6oz semi soft white cheese, shredded(I used Havarti, but anything similar would work)

How to make it

Spread pesto on cut side of each piece of focaccia. See Photo
Top with onions, mushrooms and chicken. See Photo
Add spinach then bacon. See Photo
Top with shredded cheese See Photo
Bake at 350 for about 12 minutes until bread is lightly browned around edges and cheese is melted.

Hi Keni. I thought about making pizza yesterday, but for some reason I didn't. I guess someone was telling me to wait until today so I could make this one.

Yum, sounds AMAZING! :) I LOVE making pizza on focaccia bread. Hubby used to bring home HUGE focaccia rectangles (plain and olive), they made the best pizzas! :)
