Stovies Recipe
A Scottish dish using leftover meat-traditionally lamb, but anything you have is good. Easy, filling, versatile meal. Just add a salad or veggies and you're all set.

Ingredients
  • 1 cup approx diced lamb, beef, pork, or chicken
  • 1 1/2 lb potatoes, peeled and sliced
  • 1 large onion (or more if you like things really oniony), sliced very thin
  • 1 tbs bacon or meat drippings, or vegetable oil
  • gravy, stock or water
  • salt, pepper
  • nutmeg or allspice
  • chopped parsley, chives or chervil

Directions
  1. Heat drippings or oil in a large pan, add a layer of potatoes, a layer of onion and a layer of meat.
  2. Add liquid to cover (or less if you like it drier).
  3. Season with the salt, pepper and other seasonings.
  4. Repeat the layers and seasonings.
  5. Cover with a tight-fitting lid and cook on medium heat for about 30 minutes or until potatoes are tender and liquid is mostly absorbed. Shake the pan occasionally while cooking.
  6. Serve sprinkled with the parsley, chives or chervil.

Sounds like one of those recipes that turns out different every time it's made. Easy enough for kids to do too, assuming you trust their knife skills...

Similar to our "hash", but in layers...love the sounds of this - my husband will love me for making this for him!!
