How to make it

  • Heat oven to 400 degrees F (205 degrees C). Line 12 muffin cups with paper liners.
  • In a medium bowl, combine flour, sugar, baking powder, 1 1/2 tsp. cinnamon, nutmeg, and salt; mix well. In a small bowl, combine apple cider, oil, and egg; blend well.
  • Add dry ingredients all at once; stir just until dry ingredients are moistened.
  • Stir in chopped apples, 1/2 cup walnuts, and cranberries. Divide batter between 12 muffin cups.
  • In a small bowl, mix together the 2 TBSP walnuts, brown sugar, and 1/2 tsp cinnamon. Sprinkle toping over muffins.
  • Bake for 16 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan. Serve warm.

    Taste was great. I used Granny Smith apple and dried cranberries. Good crumb texture and delicious. They also hold up well when heated. A keeper recipe.
