Spinach Salad With Mustard Agave Vinaigrette

Salad
- 8 oz. baby spinach leaves shopping list
- 1 cup pomegranate seeds shopping list
- 1/2 cup almonds (raw slivers) shopping list
- 2 oz. feta cheese crumbles shopping list
Dressing
- 2 tbsp olive oil shopping list
- 1 tbsp apple cider vinegar shopping list
- 2 tsp Dijon mustard shopping list
- 1-2 tsp Agave nectar (to taste - how sweet you'd like it) shopping list
- sea salt & black pepper (freshly ground) to taste shopping list
How to make it
Dressing
- Mix ingredients well.
Salad
- Assemble: spinach, pom seeds, almonds, feta. Drizzle with dressing.

Okay, DT...I made this for lunch today, but ran into a problem... I don't see the agave listed! :) I told ya I'd sub honey, anyway, which is what I did. I used a whole grain Dijon and added just a touch of red pepper flakes and a bit of the honey. ...more
