Ingredients

How to make it

  • Place apple cider in saucepan and bring to a boil over medium-high heat. Boil until reduced to about 1/4 cup (about 15 minutes). Remove from heat and let cool.
  • Preheat oven to 350. Grease or line 12 muffin cup tins with paper liners.
  • Whisk or sift together flours, baking powder, baking soda, salt, cinnamon, nutmeg and cloves. Set aside.
  • Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Mix in vanilla.
  • Mix in half the flour mixture. Blend in buttermilk and reduced apple cider, then mix in remaining flour mixture.
  • Fill muffin tins 3/4 full. Sprinkle with cinnamon-sugar.
  • Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.

    I made these a couple days ago and they are delicious! It's so cool how the apple cider reduces to a sweet concentrated syrupy thing. I accidentally left out the buttermilk (and honestly woke up the next morning with that thought) which I think made them just a bit more dense then intended but still so yummy! Will be making these again. Thanks!

    I made your muffins this morning for my breakfast (Picture Posted). I had apple cider needed to be put to good use before it turned hard on me. I am definitely following your recipe but as usual couldn't quite keep to the letter of it so I guess its not "I Made It" post worth.

    I didn't have any whole wheat flower but I did have milled flax so I substituted that in. Also my vanilla extract hasn't sat long enough so I substituted in some Gran Marnier I figured apples and oranges it will be okay. Then I couldn't resist tossing in some nice fat raisins just because I like raisins. And then the last confession, as I was sliding the try of muffins in I saw the buttermilk reference. Well it wasn't in there and honesly the batter would have been to thin for any more liquid.

    I can report that the muffins came out well and I had to stop myself from wolfing down another. Thanks so much for your post.
