Ingredients
  • 6 pork chops
  • 2/3 c rice
  • 1 c. water
  • 2 t salt
  • 1 chopped onion
  • 1 16oz. can tomatoes
  • 1 can whole kernel corn
  • 1/4 t pepper

Directions
  1. Brown chops in large skillet. Remove and pour off fat. Spread rice in pan and add water. Sprinkle 1 t. salt over rice. Arrange chops over rice. Sprinkle remaining 1 t. salt over chops . Spread onions, then tmatoes over chops. Spoon on corn. Sprinkle with pepper . Bring to boil and reduce heat. Cover and cook for 35 minutes.
  2. * I sometimes cook this in the oven in a covered casserole dish for about an hour at 375.

Ya'll, I tried to get to the dish and take a pic before Joe got to it,but it was not to be....lol !
I can eat this ENTIRE casserole..it's that good. I didn't today,tho...on a STRICT diet. :o(((

Just a follow up, the family loved it! Did the bacon mixed in with the rice (and of course some bacon drippings too, hey I smoke my own so why let it go to waste!)

Alterations


Made this for supper it was quite good, thinking about the next time frying up some bacon and breaking it up in there, and maybe a little Bell Pepper. Think it would give it a spanish rice flavor. YUM


I am glad i found this recipe it is just like one i made for my husbamd when we were first married. I did it in a crock pot on high for 4 hours and i swear i couldnt keep him out of it. His take on it was can i make some more and we were just startin out and I had to borrow the corn (ha ha) so I had to say no. So my suggestion is if u r pressed for time put it together in a crock pot and cook for 4 hrs on high or 8 on low and have your hands free to deal with thi kids and stuff.
