Banana Bread, Witchywoman Style

- 2 eggs shopping list
- 1/3 cup buttermilk shopping list
- 1/2 cup canola oil shopping list
- 1 teaspoon rum extract shopping list
- 3 very ripe bananas shopping list
- 1 1/2 cups firmly packed dark brown sugar shopping list
- 1 3/4 cup all purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon ground ginger shopping list
- 1/2 teaspoon nutmeg shopping list
How to make it
- Preheat oven to 350 degrees. Spray 4 mini loaf pans with non-stick cooking spray.
- Blend eggs, buttermilk, oil and bananas together until smooth. Blend in brown sugar and rum extract.
- Sift flour, baking soda, salt, cinnamon, ginger and nutmeg together in a small bowl. Add to creamed banana mixture. Stir until just combined.
- Pour into prepared mini loaf pans and bake 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pans for 5 minutes, remove and cool completely on a wire rack.
