How to make it

  • Preheat oven to 350 degrees. Spray 4 mini loaf pans with non-stick cooking spray.
  • Blend eggs, buttermilk, oil and bananas together until smooth. Blend in brown sugar and rum extract.
  • Sift flour, baking soda, salt, cinnamon, ginger and nutmeg together in a small bowl. Add to creamed banana mixture. Stir until just combined.
  • Pour into prepared mini loaf pans and bake 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in pans for 5 minutes, remove and cool completely on a wire rack.
