My Cottage Pie

- Serves 6
One of those dishes I go to when looking for comfort food...Can also use cooked chicken and chicken gravy in place of the ground beef.
Ingredients
- 1 lb. ground beef shopping list
- 1 medium onion, chopped shopping list
- 4 oz. mushrooms shopping list
- 4-6 red potatoes, peeled and diced shopping list
- 2 tbls. butter shopping list
- milk, enough to mash potatoes shopping list
- 1 1/2 cups frozen corn, thawed shopping list
- 2 cups brown gravy shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 350
- In skillet, saute onion and mushrooms until tender
- Add ground beef, salt, pepper and brown
- Drain fat
- Add meat mixture and 1/2 brown gravy to same skillet and heat through
- Cook potatoes until fork tender
- Drain; add butter, milk, salt and pepper then mash
- In 2 1/2 qt. casserole dish add meat mixture
- Top with corn
- Cover corn completely with mashed potato
- Bake 30 minutes or until hot and bubbly.
- Let rest a minute before serving.
- Plate and top with remaining brown gravy.

This recipe to me is delicious just the way it is. I really thought it would be bland with just salt and pepper but it is not.
I added leftover carrots,corn and peas. I used my own gravy that i had left over from another meal. I also used Natr...more
