How to make it

  • Combine butter, brown sugar and cinnamon and stir to dissolve and mix well.
  • Lightly brush butter mixture over one(or both) sides of each slice of bread. See Photo
  • Bake bread at 425 for about 10 minutes until lightly browned and crispy. See Photo
  • Meanwhile, toss fruits with lime juice, honey and nutmeg and set aside. See Photo
  • Cool bread just enough to handle, and then spread with thin layer of mascarpone or cream cheese. It will melt, slightly, which is a good thing!
  • Top each piece with a spoonful of fruit mixture and sprinkle with pine nuts.
  • Serve immediately while still slightly warm, or these are fine to sit out for a while and eaten room temperature.
