Low-fat Carnitas Tacos

- 2 lbs boneless pork loin shopping list
- 1 med. onion,diced shopping list
- 3 carrots,diced shopping list
- 3 cloves garlic,minced shopping list
- 1 chipolte chile in adobo,chopped plus 2 TB adobo sauce shopping list
- 2 15.5 oz. cans cannellini beans,drained and rinsed shopping list
- 1 28 oz can diced tomatoes shopping list
- 3 TB tomato paste shopping list
- 1-1/2 tsp dried oregano shopping list
- 1 tsp ground cumin shopping list
- 1 tsp kosher salt shopping list
- 1/2 tsp ground black pepper shopping list
- 1/4 tsp ea. cinnamon and cayenne pepper shopping list
- 1/4 c chopped cilantro shopping list
How to make it
- Trim excess fat from pork and cut roast in half crosswise. Combine remaining ingredients except cilantro in 6 qt. slow cooker and add pork;cover and cook 5 hours on high or 8 hours on low.
- Shred pork with 2 forks and stir in cilantro. Serve in corn tortillas with crumbled queso fresco,red onion and lime wedges on the side.I don't always do the beans...
