How to make it

  • Trim excess fat from pork and cut roast in half crosswise. Combine remaining ingredients except cilantro in 6 qt. slow cooker and add pork;cover and cook 5 hours on high or 8 hours on low.
  • Shred pork with 2 forks and stir in cilantro. Serve in corn tortillas with crumbled queso fresco,red onion and lime wedges on the side.I don't always do the beans...

    I was watching a cooing show last night and they were making carnitas. Then I got that late night craving kicking in and just knew I HAD to make some today :) Found this recipe in my recipe box, and it hit the spot!! I had lettuce wrap carnitas and like FA wanted another, but I stopped myself. Added my picture and a review in Frankieanne's IMI link below.

    This was very delicious and the heat level was just right for me. I couldn't find a tenderloin so I used a pork sirloin roast, which was new to me. 2.10 pounds. I only used one can of beans as I knew this was going to make a bunch just for me. Super delicious. My taste buds wanted a third taco but my stomach said two was plenty! Thanks for leaving us such a great recipe, Pat. Added a couple of pictures as well. More in the thread in IMI
