Ingredients

3 egg yolk

1 2/3 cup thick buttermilk

1. tsp. vanilla

1 tsp. ground cinnamon (optional)

3 tbsp. vegetable oil or melted butter

1 1/2 cup flour

2 tbsp. sugar

1 tsp. baking powder

1 tsp. soda

1/2 tsp. salt

3 egg whites, siffly beaten

Directions

- Beat egg yolks well with rotary beater and add vanilla

- Measure flour and cinnamonsifting

- Beat in buttermilk and mixed dry ingredients. Beat in butter.

- Fold in beaten egg whites very carefully

- Pour batter into griddle

- When full of bubbles, turn pancakes

- Keep warm until serving time

Hi Rish... about better pancakes, replace buttermilk for milk with lemon or vinegar... just 2 tbsp. and let them for 5 minutes before to add to the mix. :-) I hope you try them very soon, are fluffy and delicious!
