For Meatballs
- 2lbs ground chicken shopping list
- 1 1/2 cups cracker crumbs(I used a fantastic gorgonzola one) shopping list
- 2 eggs shopping list
- 3T butter, melted shopping list
- 2T light ale(not light, as in calories, but light, as opposed to dark ;) shopping list
- 2 cloves garlic, minced shopping list
- 1t ground celery seed shopping list
- 1t dry mustard shopping list
- 1/4-1t cayenne shopping list
- 2 green onions, chopped shopping list
- 2T fresh parsley, chopped shopping list
- 3oz blue cheese crumbles(I used gorgonzola) shopping list
To Taste
- about 2 cups favorite hot wing sauce(or BBQ sauce, or half of each) shopping list
- blue cheese and/or ranch dressing for dipping shopping list
How to make it
- In large bowl, combine all meatball ingredients, well. See Photo
- Form into walnut sized meatballs and place on prepared baking sheet See Photo. I like to use an old cooling rack over an old cookie sheet for things like this.
- Bake at 400 for about 20 minutes. See Photo
- Toss meatballs in sauce, then place back in the oven(you can remove the cooling rack, now ;) and bake another 10 minutes or so. See Photo
- Serve with dipping sauce, as desired.
