An adaptation on a twist of an old favourite, featured in the Toronto Star. The marshmallows make it delightfully gooey fresh from the oven!

Ingredients
  • 1 c shortening (butter flavour is what I use)
  • 1/3 c sugar
  • 1/2 c packed dark brown sugar
  • 2 eggs
  • 2 tbsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 c all-purpose flour
  • 1 c whole-wheat flour
  • 2 large bananas, mashed
  • 1 c quartered mini marshmallows
  • 1 1/2 c mini bittersweet or semisweet chocolate chips

Directions
  1. Preheat oven to 350 F.
  2. Cream shortening and sugars.
  3. Add eggs and vanilla.
  4. Combine salt, soda and flours.
  5. Add alternately with mashed bananas to creamed mixture.
  6. Fold in marshmallows and chocolate chips.
  7. Drop by tablespoons on non-stick or lined cookie sheets.
  8. Bake 9-11 minutes. Cool 10 minutes before removing to wire rack.

Oh I LOVE the combo of those flavors - will have to try these for sure...more reason to use my whole wheat flour, too...thanks!!
