Three Bean Cabbage Soup

- 1 small head cabbage, cored and chopped shopping list
- 1 cup pearl or pot barley shopping list
- 1-19 oz can white kidney beans, drained and rinsed shopping list
- 1-19 oz can garbanzo beans (chick peas), drained and rinsed shopping list
- 1-19 oz can canellini beans, drained and rinsed shopping list
- 1-28 oz can diced tomatoes shopping list
- 7 cups water shopping list
- 1 small onion, chopped shopping list
- 2 tbsp minced garlic shopping list
- 2 tbsp olive oil shopping list
- 2 tbsp ground cumin shopping list
- salt to taste shopping list
- 2 tbsp dried parsley shopping list
How to make it
- Saute cabbage, onion and garlic in oil until soft. Add remaining ingredients and bring to a boil. Reduce heat and simmer 20 minutes until barley is cooked. Serve hot.
