- about 4 cups favorite, basic, marinara sauce (I used my own: Meatball And Marinara Subs) shopping list
- 1 small can tomato paste shopping list
- 2T olive oil shopping list
- 1 large or 2 small bell peppers, chopped shopping list
- 1 medium onion, chopped shopping list
- 8oz fresh mushrooms, roughly chopped shopping list
- 3 cloves garlic, minced shopping list
- 1-3t red pepper flakes(remember, this sauce is meant to be spicy, that's the idea, but don't add more than you can handle) shopping list
- about 3-4lbs chicken pieces(you can use bone in thighs, breasts, or a variety of pieces, or, you can use bone out. I used bone in thighs), skin removed shopping list
- 3/4 cup Italian style breadcrumbs(or plain, with italian seasoning added) shopping list
- about 2oz fresh Parmesan, grated or shaved shopping list
- 1lb angel hair pasta,cooked and drained shopping list
- kosher or sea salt and fresh ground black pepper shopping list
How to make it
- In medium skillet, saute onions, peppers, red pepper flakes, mushrooms and garlic in oil until onions and peppers are tender. See Photo
- Meanwhile mix marinara sauce with tomato paste.
- Place chicken pieces in bottom of a 9X13 casserole dish and sprinkle with salt and pepper. See Photo
- When veggies are done, drain well and add them to the tomato sauce and stir to combine. See Photo
- Pour sauce over chicken pieces. See Photo
- Bake at 375 for 30-50 minutes, depending on type of chicken used. Cook until chicken is done.(165 degrees)
- Combine bread crumbs with cheese and sprinkle over top of sauce. Spritz or drizzle with olive oil, if desired.
- Increase temp to 400 and put back in the oven for about 7-10 minutes, until crumbs are golden brown. See Photo
- Serve chicken and sauce over a helping of pasta.
