How to make it

  • In medium skillet, saute onions, peppers, red pepper flakes, mushrooms and garlic in oil until onions and peppers are tender. See Photo
  • Meanwhile mix marinara sauce with tomato paste.
  • Place chicken pieces in bottom of a 9X13 casserole dish and sprinkle with salt and pepper. See Photo
  • When veggies are done, drain well and add them to the tomato sauce and stir to combine. See Photo
  • Pour sauce over chicken pieces. See Photo
  • Bake at 375 for 30-50 minutes, depending on type of chicken used. Cook until chicken is done.(165 degrees)
  • Combine bread crumbs with cheese and sprinkle over top of sauce. Spritz or drizzle with olive oil, if desired.
  • Increase temp to 400 and put back in the oven for about 7-10 minutes, until crumbs are golden brown. See Photo
  • Serve chicken and sauce over a helping of pasta.
