How to make it

  • Preheat oven to 450 degrees Fahrenheit.
  • Wash the squash and chop it up into bite-sized pieces.
  • Pulse the almonds in a food processor until they become very fine and powder-like.
  • Combine almond powder, garlic powder, salt, and pepper in a small bowl.
  • Beat the egg in a separate small bowl.
  • Dunk the squash pieces into the egg, then roll in the almond mixture, shaking off excess. For this process, I find it is quicker to do several at a time.
  • Place on a baking sheet lined with parchment paper or aluminum foil. You may need to use two baking sheets. Make sure you spread 'em out so they can get crisp :)
  • Drizzle lightly with olive oil and bake on the top rack for about 15 minutes, or until golden.

    I use almond meal or flour for coating a lot... never thought to use it on squash....sounds so good
