Almond Crusted Yellow Squash Bites

- 1 large yellow squash shopping list
- 3/4 cup almonds shopping list
- 1 egg shopping list
- 1 tbsp garlic powder shopping list
- 1 tsp salt shopping list
- 1/2 tsp ground black pepper shopping list
- olive oil shopping list
How to make it
- Preheat oven to 450 degrees Fahrenheit.
- Wash the squash and chop it up into bite-sized pieces.
- Pulse the almonds in a food processor until they become very fine and powder-like.
- Combine almond powder, garlic powder, salt, and pepper in a small bowl.
- Beat the egg in a separate small bowl.
- Dunk the squash pieces into the egg, then roll in the almond mixture, shaking off excess. For this process, I find it is quicker to do several at a time.
- Place on a baking sheet lined with parchment paper or aluminum foil. You may need to use two baking sheets. Make sure you spread 'em out so they can get crisp :)
- Drizzle lightly with olive oil and bake on the top rack for about 15 minutes, or until golden.
