Amazing(ly Easy) Bailey's Pie
From keni 12 years agoIngredients
- 1 8 or 9 inch chocolate cookie crust(homemade or purchased) shopping list
- 12oz quality milk or dark chocolate(chips are okay, as long as you use a good brand) shopping list
- 1/4-1/2 cup Bailey's Original irish cream(the full 1/2 cup is what I used and was a fairly intense flavor and less chocolaty...perfect for us!) shopping list
- 8oz cream cheese, softened shopping list
- 3T butter, softened shopping list
- 1/2 cup powdered sugar shopping list
- 1t vanilla shopping list
- 2 cup heavy whipping cream, whipped to stiff peaks(or can probably sub 1 regular sized Cool Whip, just thawed) shopping list
How to make it
- In medium glass bowl melt chocolate, with Irish Cream, slowly(20 seconds at a time) in microwave or over double broiler. If the chocolate gets kind of thick and seizing, like, try not to panic, just make sure to stir in the cream well. As long as it's not grainy, and it's fully incorporated, it will mix in fine with the rest of the ingredients.
- In mixing bowl, beat cream cheese, butter, powdered sugar and vanilla.
- Add melted chocolate and mix well until uniform color.
- Carefully fold in whipped cream until all incorporated and uniform color.
- Spoon into crust and chill at least 4 hours.
- (top with chocolate curls or shaved chocolate and a dab more whipped cream, if desired)

I made this over the weekend for company. Everyone enjoyed trying something new. It is very rich. I used the full 1/2 cup of Baily's, next time I will half that because it was a bit much for some. Will be making this again! Thanks!
