Fresh Summer Pasta From The Mediterranean

- 1 Package (250g) Barilla Pappardelle | Or your pasta of choice shopping list
- 1/4 lb feta cheese | Or to taste shopping list
- 1 cucumber | Thinly sliced into little circles shopping list
- 5 Medium Size shallots | Sliced into little wedge boats shopping list
- 1 Bunch of Fresh chives | Chopped into 1in tiny straws shopping list
- 4 Frank or sausage of Choice | Sliced into 1/8in little circles shopping list
- 1 lemon shopping list
- 1 tsp butter shopping list
- olive oil shopping list
- salt shopping list
How to make it
- 1. Bring water to a boil while you prepare/chop the ingredients
- 2. Toss Cucumber slices with a small dash of Lemon juice (about 2 cocktail wedges)
- 2.5 Toss pasta into boiling water
- Once the pasta is in the water...
- 3. Melt butter in a frying pan and brown Shallots
- 4. Toss in HALF of the Chive along with Sausages, stir frequently until the Sausages are slightly brown on the edges but DON'T wilt the Chives too much~!
- 5. Drain cooked Pasta into a colander, run it under cold water for 1 minute
- 6. Toss pasta with Olive Oil & Salt to taste
- 7. Serve pasta & Top with stir fried ingredients
- Finishing Touch !
- 8. Sprinkle the rest of the Fresh Chives in equal amounts on the delicious dish
- 9. Top with as much Feta Cheese or Goat Cheese as your heart desires. I wouldn't be stingy~! Its Summer!
