Iced Peppermint Tea With Lime Recipe

This tea will keep in the fridge for a few days, serve in tall glasses with a sprig of mint in each and some lime wedges on the side, if you like. Guaranteed to cool you down in the heat of the day..... (a recipe from womans weekly )

Ingredients
  • 1 peppermint tea bag
  • 2 Ceylon tea bags
  • 100g (31/2 oz) caster sugar
  • Juice of 2 limes
  • Juice of 1 lemon
  • Fresh mint sprigs and lime wedges, for serving (optional)

Directions
  1. Place the peppermint and Ceylon tea bags in a large teapot or heatproof jug.
  2. Add the sugar and pour in 750ml (1 1/4 pints) boiling water
  3. Stir well to dissolve the sugar and leave the tea to infuse for 10 minutes.
  4. Remove the teabags and leave the tea to cool.
  5. Stir in the strained lime and lemon juice and chill in the fridge.
