Balsamic Greek Inspired Pizza

for the dough
- 1/2 cup whole wheat flour shopping list
- 1 cup bread flour shopping list
- 1 Tbsp baking powder shopping list
- 3/4 cup whole milk shopping list
- 1 Tbsp pure honey shopping list
- 1 Tbsp extra virgin olive oil shopping list
- 1/2 tsp kosher salt shopping list
- 1 Tbsp garlic powder shopping list
for the toppings
- 1 small cucumber, peeled & thinly sliced shopping list
- 1/2 cup grape tomatoes, sliced shopping list
- 1/2 crumbled feta shopping list
- 1/2 cup freshly grated parmesan shopping list
- 3 Tbsp balsamic vinegar shopping list
- 2 Tbsp freshly squeezed lemon juice shopping list
- extra virgin olive oil, for brushing the dough shopping list
- dashes of ground black pepper shopping list
How to make it
- Combine the dry ingredients in a large bowl (if using a stand mixer, attach the dough hook). Add in the honey, oil, and milk until the dough begins to come together. If dough is sticky, add a pinch more flour; if it is too dry, add a splash of milk.
- Turn out dough onto a floured surface & knead until it is smooth and elastic. Form dough into a ball and let it rest at least 10 minutes, covered, in an oiled bowl while you prepare the toppings.
- Turn out dough onto a floured surface and roll out thin with a floured rolling pin (I also hold it off the board for a bit, turning it quickly and letting gravity stretch it out nice and thin) until it's about 1/8 inch thick.
- Brush a baking sheet with oil and transfer the dough to sheet. Brush the dough with olive oil. Layer the cucumber and tomato; top with the feta & parmesan cheeses. Drizzle the balsamic vinegar & lemon juice evenly over the entire top, and sprinkle on the pepper (to taste).
- Bake in a preheated oven at 400 degrees Fahrenheit for 15-20 minutes, or until edges are golden. Slice into squares & enjoy!
