How to make it

  • Combine the dry ingredients in a large bowl (if using a stand mixer, attach the dough hook). Add in the honey, oil, and milk until the dough begins to come together. If dough is sticky, add a pinch more flour; if it is too dry, add a splash of milk.
  • Turn out dough onto a floured surface & knead until it is smooth and elastic. Form dough into a ball and let it rest at least 10 minutes, covered, in an oiled bowl while you prepare the toppings.
  • Turn out dough onto a floured surface and roll out thin with a floured rolling pin (I also hold it off the board for a bit, turning it quickly and letting gravity stretch it out nice and thin) until it's about 1/8 inch thick.
  • Brush a baking sheet with oil and transfer the dough to sheet. Brush the dough with olive oil. Layer the cucumber and tomato; top with the feta & parmesan cheeses. Drizzle the balsamic vinegar & lemon juice evenly over the entire top, and sprinkle on the pepper (to taste).
  • Bake in a preheated oven at 400 degrees Fahrenheit for 15-20 minutes, or until edges are golden. Slice into squares & enjoy!
