How to make it

  • For Crust

  • Pulse cookies in blender or food processor until fine crumbs.
  • In 10 inch deep dish pie plate(sprayed with no stick spray), combine crumbs with salt and 3-4T melted butter. Start with 3T and add another T, if needed, to be able to press crumbs together to form a crust.
  • Make sure to have a nice amount of crumbs on the bottom, but don't worry about going ALL the way up the sides. Just most of the way is fine. See Photo
  • For Filling

  • Combine sugars, salt and malt powder, in large glass bowl.
  • Add melted butter and stir to combine and moisten all the dry ingredients.
  • Then stir in the cream and vanilla combining well.
  • Add egg yolks, one at a time, stirring well, but NOT beating, after each addition.
  • Pour into prepared crust and bake at 350 for about 17-20 minutes, until filling is set and pie and crust are nicely browned.
  • Let cool completely on wire racks, then refrigerate at least 1 hours.

    I want to make this, but you have to help me out here... I never saw malt powder. I can try on a organic food store, but I am afraid I won't find it. Could I substitute with something else?
