How to make it

  • 1.Put all ingredients in crockpot on low 6-8 hours(mine was done in about 5-1/2 hours)
  • 2.Garnish with cilantro,scallions and peanuts.
  • 3.Serve with jasmine rice made with 1/2 coconut milk and 1/2 water(1 c raw rice,1 c coconut milk,1 c water)
  • I added 1 tsp Sriracha
  • If you want to try this and don't have a crockpot,bake at 350 for about 1 hour or so.

    I found it too peanut buttery, even with half the peanut butter. I had to tweak it quite a bit, so I don't think it's fair to rate it. I got it to work in the end though, read more here to see my tweaks: Pleclares
    I love the ease of the crock pot, so that made it worthwhile for sure, the chicken fell apart and was beautifully tender and juicy. We served it over sesame-garlic rice

    Made this for dinner, tonight... it was flavorful... I found the original Betty Crocker recipe was in the oven, then put in her slow cooker cookbook... it did call for more lime juice, which I did use, and I also used half the peanut butter, as I knew 1/2 cup would have been way too much for our tastes, and 1/2 the soy, also for personal preference. I also added several dashes of sriracha sauce, too, because after tasting it, it was just screaming for some heat....especially since it's meant to be a Thai dish.....but could have used a lot more. :) Since the chicken cooks right in this dish, and it's in the slow cooker, the fat from the meat did cause a bit of a separation issue with the sauce. Not bad, but not as visually appealing as the pic that's posted. :) My chicken was falling apart, for sure, and am glad I added the extra lime juice cus I think that peanut butter benefited from the acid. Was sure an easy, dump and go recipe, so it was much appreciated! :)

    Made these last night and they were fantastic! Only thing I did different was chop my chicken up and cook on the stove in the sauce. Added the peanut butter after chicken was cooked. Also added some red curry powder (cuz we like it REALLY spicy) Used the Sri racha too!

    What's cilantro salsa Pat? Is it green? Would I be better to use a green enchilada sauce as opposed to a red tomato salsa if I can't find cilantro salsa? Looks devine.
