- 1 can (15 oz) chickpeas/garbanzo beans, drained and rinsed shopping list
- 1 can (15 oz) black beans, drained and rinsed shopping list
- 1 small red onion, chopped or 1/4 cup scallions, sliced shopping list
- 1 clove garlic, finely minced shopping list
- 1/3 cup fresh parsley, chopped shopping list
- 2 T fresh mint, chopped shopping list
- 3/4 cup tomatoes chopped shopping list
- 1/4 cup extra virgin olive oil shopping list
- 2 T lemon juice or cider vinegar shopping list
- good pinch sea salt shopping list
- black pepper to taste shopping list
- 1 small cucumber, chopped (optional) shopping list
- 2 oz feta, crumbled (optional) shopping list
- 1 can (5 oz) solid white tuna, drained and flaked (optional) shopping list
How to make it
- Put rinsed and drained beans into a large mixing bowl. Toss, very gently, with the remaining ingredients. Let stand about a half hour before serving. The optional ingredients are not "authentic" - I just think any or all of them would be good with it.
