Some Lasagna Love

- 8 lasagna noodles, cooked el dente shopping list
- 2 Italian sausages, casings removed and cooked breaking up until no longer pink shopping list
- 1 small eggplant shopping list
- olive oil shopping list
- 1 small container ricotta cheese shopping list
- 1 8 oz. block mozzarella cheese, grated shopping list
- 1 egg shopping list
- parsley, enough for cheese mixture...I just eyed it shopping list
- salt and pepper to taste shopping list
- 1 cup Italian blend cheese, shredded shopping list
- Your favorite marinara sauce shopping list
How to make it
- Preheat oven to 350
- In mixing bowl, add ricotta,1 cup mozzarella, egg, parsley, salt and pepper
- Mix to combine and set aside
- Peel eggplant and cut 1/4 inch lengthwise
- Using pastry brush, brush eggplant slices with olive oil then salt and pepper
- On grill pan over medium heat grill eggplant
- Set aside
- Add remaining mozzarella cheese to Italian blend cheese
- In 8x8 casserole pan, add enough marinara to coat bottom of pan
- Layer with lasagna noodle
- Add a layer of ricotta cheese
- Sprinkle grated cheese on top
- Sprinkle with sausage
- Layer with sauce
- Top with eggplant
- Repeat layer process 2 more times
- Add remaining cheese to top, I needed more but it's only because I had more...LOL
- Bake covered in foil for 30 minutes
- Remove foil and bake another 30 minutes or so
