How to make it

  • Cook pasta per package directions, to al dente.
  • Drain, rinse briefly so the pasta doesn't stick, then set aside.
  • In large dutch oven, or similar(I used cast iron) melt butter over medium heat.
  • Add onion and garlic and saute, stirring often, until onion is tender.
  • Add tomatoes, herbs and tuna(IF using fresh) and cook about 10 minutes.
  • Add lemon juice, salt and pepper, spinach(and tuna if using canned :) and cook another 5 or so, just until spinach is cooked down.
  • Add drained pasta and stir to coat. Heat through.
  • Top with crumbled feta just before serving.
  • PS I served this with both of these recipes, from friends. Either or both compliments it well and I recommend them! :) Savory Cheese Loaf

    Lovely. Goinna make this this weekend and use fresh yellowfin. I'll add that when you say to add canned tuna. Thanks for the post. RJ
