Penne With Tuna And Spinach

- 1lb whole wheat penne shopping list
- 1/2 stick butter shopping list
- 1 large onion, chopped shopping list
- 4-6 cloves garlic, minced shopping list
- 2 large tomatoes, diced shopping list
- 1lb fresh spinach, roughly chopped shopping list
- 1 1/2lbs albacore tuna(canned is fine...use 2 large cans, drained....if it's fresh, no need to cook it :) shopping list
- 1/2 lemon shopping list
- 2T fresh oregano, chopped shopping list
- 1T fresh basil, chopped shopping list
- 4oz feta cheese crumbles shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Cook pasta per package directions, to al dente.
- Drain, rinse briefly so the pasta doesn't stick, then set aside.
- In large dutch oven, or similar(I used cast iron) melt butter over medium heat.
- Add onion and garlic and saute, stirring often, until onion is tender.
- Add tomatoes, herbs and tuna(IF using fresh) and cook about 10 minutes.
- Add lemon juice, salt and pepper, spinach(and tuna if using canned :) and cook another 5 or so, just until spinach is cooked down.
- Add drained pasta and stir to coat. Heat through.
- Top with crumbled feta just before serving.
- PS I served this with both of these recipes, from friends. Either or both compliments it well and I recommend them! :) Savory Cheese Loaf
