Ultimate Smoky Chicken Sandwich

- about 2 1/2lbs boneless chicken pieces(thighs or breasts--you want enough pieces for 6 sandwiches, so pound them to no more than 1/2 inch, if needed... I used thighs, already opened, so it was quick and easy :) shopping list
- juice from 2 limes shopping list
- 3-4 canned chipotles(just leave them whole) shopping list
- 1T olive oil shopping list
- 1T worcestershire sauce shopping list
- 2 cloves garlic, minced shopping list
- 1t smoked paprika shopping list
- kosher or sea salt and fresh ground pepper shopping list
- 8oz smoked gouda, sliced shopping list
- 1/2lb hardwood smoked bacon, cooked crisp shopping list
- hamburger, or similar, buns shopping list
Chipotle spinach Spread
- 1 cup Mayo shopping list
- 2T sour cream shopping list
- 4oz cream cheese, softened shopping list
- 1-2T adobo sauce from chipotles shopping list
- a handful of fresh spinach, chopped fine shopping list
- 1 green onion, sliced shopping list
How to make it
- Place chicken pieces in large zipper bag.
- Add lime juice, garlic, chipotles, paprika, Worcestershire, and a bit of salt and pepper.
- Shake bag to coat the chicken. Set aide for at least 15 minutes and up to over night.
- Combine all spread ingredients and mix well. Set aside in fridge.
- Grill or broil chicken over medium high heat until inside temp is 160.(time will vary depending on how thick your pieces are)
- Place a slice of gouda on bottom half of bun, top with hot chicken, bacon, and add a generous helping of the spread to the top bun.
