Crunchy Oven Baked Taquitos

- 2 cups cooked shredded chicken shopping list
- 3 oz softened cream cheese (regular or low-fat) shopping list
- 1/3 cup La Victoria Thick N chunky salsa Verde shopping list
- juice of 1 lime shopping list
- 1 tsp chili powder shopping list
- 1 garlic clove diced or smashed through a garlic press shopping list
- 2 sliced scallions shopping list
- 1 cup shredded cheddar or taco nacho cheese shopping list
- 12 6" corn tortillas shopping list
- 2 Tbs vegetable oil shopping list
- kosher salt shopping list
How to make it
- Preheat oven to 425
- Mix softened cream cheese, salsa verde, lime juice, chili powder, garlic, scallions, shredded cheese together. Add shredded chicken and thoroughly mix together
- Heat tortillas in a damp paper towel in microwave for 20 seconds to soften and help prevent cracking
- Put 3 Tbs chicken mixture into bottom third of each tortillas and roll up
- Place each tortilla seam side down on a foiled lined baking sheet or Silpat lined baking sheet
- Brush each taquito with vegetable oil, sprinkle with a tiny bit of kosher salt and bake for 15-20 minutes or until crisp.
- Cool for 5 minutes. They will be steaming hot. Serve with guacamole and/or sour cream

Yum!! These have a lot of flavor and are super easy to make! I froze half and am pretty sure they will reheat very well. Added a review in Frankieanne's IMI link below :)
