Cuban Flatbread Pizzas

- 1lb smoked, grilled, braised or broiled pork loin, sliced into 1/4 inch strips(cold is fine :) shopping list
- 1/2lb smoked ham, sliced thin shopping list
- 8oz Swiss, Havarti, Gouda, or similar cheese, grated(I used a great chili/lime Gouda) shopping list
- 1 red onion, sliced into thin rings shopping list
- dill pickle spears, sliced shopping list
- cooked black beans, optional shopping list
- 6 6-inch flatbreads shopping list
For mustard Mojo Sauce
- 1/3 cup olive oil shopping list
- 4 cloves garlic, minced shopping list
- 1/3 cup not from concentrate orange juice shopping list
- juice from 2-3 limes shopping list
- 1t ground cumin shopping list
- 1t ground coriander shopping list
- 3T stone ground mustard(I used hot) shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
For Mustard Mojo Sauce
- Heat olive oil in small sauce pan over medium heat.
- Add the garlic, all at once, and cook, stirring constantly, about 30-45 seconds. Don't let it burn!
- Add orange and lime juices, cumin and coriander and lower temp to main a high simmer. Simmer until sauce is reduced to about half.
- Remove from heat and let cool slightly.
- Add mustard and salt and pepper and whisk well. Set aside.
To Assemble Pizzas
- Brush Mojo sauce over one side of each of the flatbreads.
- Layer with pork strips, ham, pickles, red onion, and sprinkle with black beans, if using. See Photo
- Top with shredded cheese.
- Bake at 425 for about 7-10 minutes, until cheese is melted and pizzas are hot, throughout.
