S N F Breaded Tenderloins

- 2 pork tenderloins, 1lb each shopping list
- 2 1/4 cups panko bread crumbs shopping list
- about 1/2 cup flour shopping list
- 1t season salt blend shopping list
- 1T smoked paprika shopping list
- 1/2-2t cayenne shopping list
- 1t fresh ground pepper shopping list
- 3 eggs shopping list
- 3-4T buttermilk shopping list
- several dashes of hot sauce shopping list
- oil for frying shopping list
For Serving
- sandwich buns(I used kaiser rolls) shopping list

- red onion, sliced~~ shopping list

How to make it
- In pie plate or similar dish(it doesn't have to be deep, but it's gotta be pretty large diameter), combine bread crumbs, flour, season salt, paprika, cayenne and black pepper. Set aside.
- In another pie plate, beat eggs and add buttermilk and hot sauce and mix to combine. Set aside.
- Slice each pork loin into 4 equal pieces.
- Set each slice of pork on an end between two pieces of plastic wrap.
- With meat mallet, or similar, pound each piece of tenderloin down to about 1/4 inch thickness.
- Heat about 1inch oil to 370 in a pot/pan/skillet set up to be able to maintain the temp of the oil throughout frying all the sandwiches.
- Dip each flattened loin into egg mixture, then bread crumb mixture, to coat.
- Fry one at a time in oil making sure to maintain the temperature between 365-375. Flip once and cook until golden brown and on both sides. (this took me not even 3 minutes on each side).
- Serve immediately or, if you want to serve them all together, just line a baking sheet with slices of bread and as the tenderloins are done, rest them on the bread and keep the sheet in a very low oven. This helps drain the grease but still keep the breading crisp, much like can be done with whole catfish. :)
- Serve on buns with condiments of choice.
