Get Your Kids to Eat Zucchini Casserole

- 3 medium zucchini squash shopping list
- 1/2 onion, chopped shopping list
- 2 fresh tomatoes, sliced shopping list
- 2 tablespoons olive oil shopping list
- 1 pound container low-fat cottage cheese, liquid drained off top shopping list
- 1 teaspoon basil shopping list
- 1/2 teaspoon oregano shopping list
- 1/2 cup shredded parmesan cheese shopping list
How to make it
- Clean zucchini, and slice.
- Saute zucchini and chopped onion in oil.
- In a blender, whip cottage cheese with basil and oregano.
- In a 1 1/2 quart casserole dish, place alternating layers of zucchini, cottage cheese mixture and tomatoes.
- Top with parmesan cheese.
- Bake, uncovered, at 350 degree for 25-30 minutes.
