- 1/2 lb. ground beef shopping list
- 1/2 lb. Italian sausage, bulk shopping list
- 1 small onion, diced shopping list
- 1 large carrot, finely diced shopping list
- 3 stalks celery, diced shopping list
- 2 cloves garlic, minced shopping list
- 2 14.5-oz. cans diced tomatoes shopping list
- 1 15-oz. can cannelloni beans, with liquid shopping list
- 1 15-oz. can great northern beans, with liquid shopping list
- 1 15-oz. can tomato sauce shopping list
- 1 12-oz. can V-8 juice shopping list
- 1 tbls. white vinegar shopping list
- 1 tsp. salt shopping list
- 1 tsp. oregano shopping list
- 1 tsp. basil shopping list
- 1/2 tsp. pepper shopping list
- 1/2 tsp. thyme shopping list
- 1/2 lb. elbow pasta shopping list
- Handful of spinach shopping list
- Grated Parmesan to Garnish shopping list
How to make it
- Brown ground beef and sausage in large saucepan over medium heat Drain fat
- Add onion, carrot, celery and garlic; cook for 10 minutes or until veggies are crisp tender.
- Add remaining ingredients, except pasta and spinach; simmer for 1 hour
- In another saucepan, cook pasta according to package directions until al dente
- Drain pasta
- After soup has simmered an hour, add cooked pasta and spinach then simmer 5-10 minutes
- After placing in bowls, sprinkle with Parmesan cheese
