Steamed Lemon Poppy Seed Cake

- I adapted the recipe slightly from stove top PC for my electric pressure cooker shopping list
- 1 stick of unsalted butter, room temp shopping list
- 1 cup sugar shopping list
- 2 eggs separated, room temp shopping list
- 1 tsp vanilla shopping list
- juice and zest from 2 lemons divided shopping list
- 1 1/4 cup flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 2/3 cup milk shopping list
- 1/3 cup poopy seeds shopping list
- glaze shopping list
- 1/2 cup confectioners sugar shopping list
- half of the lemon zest and juice shopping list
How to make it
- Note: cooking time is 20 minutes, about 10 minutes to prepare recipe adapted for my electric pressure cooker:
- Cream butter and sugar till fluffy
- Beat in egg yolks and vanilla
- Beat in half the lemon juice and half the lemon zest
- Combine the dry ingredients and add to the creamed mixture alternately with the milk in 2-3 additions
- Fold in the poppy seeds
- Beat whites stiff
- Fold into cake batter till combined
- Pour mixture in a greased and flour 1 liter ( 4 cup) souffle dish or bundt pan that fits into your cooker
- Mine cake pan was a small 8 inch size- fit perfectly into the large pr cooker pan )
- Seal top of cake pan secure with foil
- Place 2 cups of water in the cooker
- Place a wire trivet on the floor of the cooker
- Now using foil, tear off a 2 ft long piece and fold over a few times to make a long strip that will be used to remove cake pan
- Center cake pan on midpoint of strip and lower into cooker to set on the metal trivet and fashion the remainder as a handle to remove the pan
- Pressure cook 20 minutes.
- Let steam drop naturally
- Carefully remove cover
- Lift cake pan out of cooker to cooling rack
- Remove foil handles and foil cover
- Cool Completely on rack
- Invert onto cake platter and drizzle with glaze
- Note: this was just as good as my best oven baked lemon poppy seed cakes
- I actually served it warm and it was just wonderful
- Wrap cold cake well.
