How to make it

  • Cook squash by your favorite method.( Micro, steam, pressure cook etc )
  • Normally I cut the squash in half, scoop out the seeds and any wet pulp
  • I pierce the skin with a knife
  • I place skin side up and usually microwave each half till tender may 12 to 15 minutes ( skin side will be shiny and very soft indicating squash is tender )
  • I let it cool, then I take the tinges of a fork and scrape out all the strands which are dry and separate nicely into a bowl-
  • Now melt butter in a large skillet over medium heat.
  • Toss in the strands to get coated all over with butter.
  • Add herbs of choice, and grated or shredded cheese of choice, garlic if using and cook and stir till cheese is melted and all is hot.
  • This makes a wonderful side dish with any meal
  • Reheats well too.

    Bonefish Grille serves spaghetti squash as a side vegetable with a lot of their meals and they converted the hubby. Now, I can make it at home and be guaranteed he will eat it. Nice post, anything is good with butter, baby.
