Do you not use a cooking apple for pies and such like in the U.S? We always use cooking apples here as they are sharper for cooking than the ordinary dessert apples which tend to be sweeter.

Adding the butter & brown sugar under the bottom crust gives unique surprise. Due to the size of the pan I baked this an additional 15 minutes. The results were "over the top"!
