Potato Onion Soup With Pesto

- 3 large potatoes, peeled and sliced shopping list
- 1 large onion, thinly sliced shopping list
- 2 cloves of garlic, minced shopping list
- 4 cups chicken stock, flavour with extra bouillion booster if needed. I use 'Better than Chicken Bouillion' to taste shopping list
- salt and freshly ground pepper to taste shopping list
- 1/2 cup pesto shopping list
How to make it
- In a saucepan, combine the potatoes, onions, garlic and chicken stock.
- Bring to a boil, then turn the heat to low and simmer, covered, for 20 minutes, or until the potatoes and onions are tender.
- Using a stick blender, puree until smooth.
- Ladle the soup into soup bowls and swirl the pesto on top.
- Serve and enjoy!
