Spicy Veal Cowboy Chop

- 2-1 lb veal "cowboy" chops (yes, this is what they're called at the butchers!) ...also, any good steak would work shopping list
For the rub
- Combine the following in a bowl: shopping list
- 1 T black pepper shopping list
- 1 T kosher salt shopping list
- 1 T ground rosemary shopping list
- 1/2 tsp white pepper shopping list
- 1/4 tsp cayenne pepper shopping list
For the butter
- In a microwave safe bowl combine: shopping list
- 2 T butter shopping list
- dash worcestershire sauce shopping list
- 1 1/2 tsp parsley shopping list
- 1/2 tsp red pepper flakes shopping list
How to make it
- Allow the chops to sit at room temperature for about an hour
- Get the grill ready to go. I use charcoal, so I start it about 1/2 an hour before I'm ready to cook
- Combine the rub mixture, and hand rub it into the meat on all sides
- Cook the chop each side on the open flame for about 5-6 minutes per side for medium rare
- Remove from the heat and allow about 5 minutes for them to rest
- During that time, combine the butter mixture and microwave on high for 35 seconds
- Pour it on top of each chop, and serve
