For Meatballs
- 2lbs lean meat, ground(venison, lean beef, chicken, pork or any combo) shopping list
- about 1T diced chilies shopping list
- about 4oz spicy tomato sauce shopping list
- 1-1 1/2 cups cornbread or cornbread cracker crumbs shopping list
- 1 egg shopping list
- 1/2 onion, grated shopping list
- kosher or sea salt and fresh ground pepper shopping list
For Spicy Marinara
- about 42oz crushed tomatoes shopping list
- about 14oz spicy tomato sauce(I get mine from the Mexican section) shopping list
- 3 cloves garlic, minced shopping list
- 1 onion, diced shopping list
- 2 bell peppers, diced(or use 1 bell and 2 hot peppers) shopping list
- 1T ground cumin shopping list
- 1T ground coriander shopping list
- 1T fresh oregano, minced(or sub a couple t dried, Mexican, if you can) shopping list
- 1T Spanish sweet or hot paprika shopping list
- 2T honey shopping list
- 2 limes, juiced shopping list
- kosher or sea salt and fresh ground pepper shopping list
- couple pinches of baking soda to help if you want to tame down the acidity of the tomatoes. shopping list
- 1lb pasta(the blend I used was great, but not necessary) shopping list
- shredded Cotija or manchego cheese shopping list
- fresh cilantro shopping list
- black olives, sliced shopping list
How to make it
For Meatballs
- Combine all ingredients and mix together with hands until blended, but do not over mix.
- Form into small meatballs and bake on cooling rack over a baking sheet for about 20 minutes at 350, or, drop into sauce, below.
For Spicy Marinara
- Combine all ingredients in slow cooker.
- Add formed meatballs and cook on low power about 6 hours, until meat is cooked through.
- Try not to stir these very often, but it's okay to do so once or twice. Make sure the meatballs are packed firm and even still, a few might break up a bit...that's okay, it just makes a wonderful meat sauce.
- Cook pasta per package directions, then drain.
- Serve the sauce and meatballs over the cooked pasta and garnish with cheese, cilantro and olives, if desired.

It was very good. A nice addition was the cornbread mixture for the meatballs. For the pasta, I used the garden blend pene that I found at Ingles. It was spicy, and we like it that way, but I can see why she named it Al Bundy's Gas LOL!
