How to make it

  • Rub the waffle maker with lightly-oiled/buttered paper towel and preheat your waffle maker.
  • In a mixing bowl, whisk eggs vigorously for a few seconds. Whisk in the melted butter, milk and salt. Add the flour and baking powder and stir until combined. Stir in the cheese and green onion. Let sit for about 10 minutes.
  • Bake according to your waffle maker's specifications.
  • Fill each waffle with eggs and bacon, cut into quarters and serve.

    ..are you kidding?? I just made a cheddar/scallion waffle dish, too! It was one of those "oooh, you need to try a version of...." and that's part of what I did. SO funny! Anyway, these look great! :-)

    I love waffles. Momma used to put partially cooked bacon on the bottom plate of the waffle maker and then put on the batter, So good.
