Cheddar & Scallion Waffle Breakfast Sandwich

- Waffles: shopping list
- 2 organic eggs shopping list
- 1/2 cup milk + more if needed shopping list
- 1/4 cup melted unsalted butter shopping list
- 1 cup all purpose flour shopping list
- 1/2 tsp kosher salt shopping list
- 1 tsp baking powder shopping list
- 1/4 cup chopped green onion/scallion (or chives) shopping list
- 1/2 cup organic white sharp cheddar cheese, shredded shopping list
- Filling: shopping list
- fried eggs seasoned with pink himalayan salt and freshly ground black pepper shopping list
- applewood smoked bacon, cooked shopping list
How to make it
- Rub the waffle maker with lightly-oiled/buttered paper towel and preheat your waffle maker.
- In a mixing bowl, whisk eggs vigorously for a few seconds. Whisk in the melted butter, milk and salt. Add the flour and baking powder and stir until combined. Stir in the cheese and green onion. Let sit for about 10 minutes.
- Bake according to your waffle maker's specifications.
- Fill each waffle with eggs and bacon, cut into quarters and serve.
