How to make it

  • Cut all the vegetables into small pieces.
  • Put a non stick sauce pan on the stove, add the olive oil and the sausages and turn the heat to medium high. Cook the sausages on all sides until nicely browned. Remove from the pan.
  • Put the vegetables in the pan and saute until just barely tender.
  • Add the beans to the pan and place the sausages on the beans and press down into them slightly. Add enough of the cooking water to barely cover the sausages. Add the salt, pepper and oregano.
  • Bring to the boil and then cover and simmer for 10 minutes. Remove the lid and let simmer another 10 minutes or so to finish cooking the sausages and to reduce the liquid.

    joe can i use polish kielbasi, with a lot of garlic in it? the italians in philadelphia dont make good sausage....only good italian sausage is with brocoli rab and provolone! brian

    This was really good. I didn't have your specialty sausages, so I used an Italian chicken variety. I also added some diced mini peppers. I put a lil fresh grated Parm and chopped parsley on top just for serving. More here. Joe 1155s

    How id Florence in March? It sure isn't spring yet. Nice combo Joe. I'll never get that sausage but I've got some simple lamb sausage that may work. Thanks for the post. RJ
