Fresh Strawberry Cake

- 1 cup butter shopping list
- 3/4 cup granulated sugar shopping list
- 1/2 cup raw or light brown sugar shopping list
- 2 eggs shopping list
- 1t vanilla shopping list
- 2 1/2 cups flour shopping list
- 1/2t salt shopping list
- 1T baking powder shopping list
- 1 cup fresh mashed strawberries(this is the measurement after mashing) shopping list
For Strawberry Mousse Cream Cheese Frosting
- 8oz cream cheese, softened shopping list
- 4T butter, softened shopping list
- 1t vanilla shopping list
- about 3 cups powdered sugar shopping list
- 1/4 cup fresh mashed strawberries shopping list
- 1cup fresh whipping cream, whipped(add a lil powdered sugar to act as a stabilizer) shopping list
How to make it
- In mixing bowl, beat together butter and sugars until well mixed.
- Add vanilla and mix well.
- Add eggs, one at time, beating well after each.
- Combine flour, salt and baking powder and add about 1/3 at a time, alternating with strawberries, mixing gently until combine.
- Spread into a well greased/floured 9X13 pan and bake at 350 for about 35-40 minutes until a toothpick comes out JUST clean.
- Let cool completely in pan.
For Frosting
- Beat together butter and cream cheese until well blended and smooth.
- Add vanilla and beat well, again.
- Add 2 cups of sugar and mix very well.
- Add the strawberries and mix well, again.
- Determine consistency and add more sugar, as needed to thicken slightly.
- Fold in whipped cream and frost completely cooled cake.
- Keep cake cool(not necessarily refrigerated) to keep the frosting in the best shape. :-)
- *this cake can be made as a layer cake, but you might want to add about 1/2 cup of butter milk to the batter to create a lighter, less dense out come.
