Ingredients

How to make it

  • In mixing bowl, beat together butter and sugars until well mixed.
  • Add vanilla and mix well.
  • Add eggs, one at time, beating well after each.
  • Combine flour, salt and baking powder and add about 1/3 at a time, alternating with strawberries, mixing gently until combine.
  • Spread into a well greased/floured 9X13 pan and bake at 350 for about 35-40 minutes until a toothpick comes out JUST clean.
  • Let cool completely in pan.
  • For Frosting

  • Beat together butter and cream cheese until well blended and smooth.
  • Add vanilla and beat well, again.
  • Add 2 cups of sugar and mix very well.
  • Add the strawberries and mix well, again.
  • Determine consistency and add more sugar, as needed to thicken slightly.
  • Fold in whipped cream and frost completely cooled cake.
  • Keep cake cool(not necessarily refrigerated) to keep the frosting in the best shape. :-)
  • *this cake can be made as a layer cake, but you might want to add about 1/2 cup of butter milk to the batter to create a lighter, less dense out come.
