How to make it

  • Mix all the marinade ingredients together in a bowl and add the chicken. Cover and refrigerate for at least 1 hour or preferably overnight.
  • Setup a barbecue, or move your oven rack to the top position and turn on the broiler.
  • Grill the chicken until they are cooked through. Tent with foil and let rest for 10 minutes. Cut into small cubes.
  • Serve with lettuce leaves, Asian pear and gochujang.

    I knew this recipe would be a hit the moment I laid eyes on it. It did not disappoint! I used chicken breast and split them horizontally so I would have two thin pieces of chicken to soak up all of the yummy marinade. Due to cold weather, I broiled them in the oven for a few short minutes on each side. The only thing I did not have was the Korean hot sauce so I substituted Sriracha. These were originally meant as a main course for dinner. After plating them for the photo, I asked hubby if he’d like to sample one. Before I knew it, the two of us had quickly devoured them, making for a delightful appetizer. Thank You, Luisascatering, for sharing your wonderful recipe!
