Bang Bang Chicken Kabobs

- 4 boneless skinless chicken breasts cut into 1 inch chunks shopping list
- 1 red bell pepper cut into 1 inch chunks (All I had was a green pepper) shopping list
- 1 medium yellow onion cut into 1 inch chunks shopping list
- Bamboo wood skewers soaked in water for 15 minutes shopping list
- olive oil, salt, black pepper shopping list
- 1/4 cup mayo shopping list
- 1/4 cup Thai sweet chili sauce shopping list
- 5-6+ drops of Sriracha hot sauce – Use this to taste- if you like things spicy, add more. If you don’t – add a few drops (I put in 8 drops and it was perfect for us) shopping list
How to make it
- In a small bowl combine mayo with Thai Sweet Chili Sauce and Sriracha Hot Sauce
- Whisk together until smooth and set aside
- Season the chicken and veggies separately with salt and pepper to taste, then drizzle with olive oil
- Skewer the chicken, then skewer peppers and onions
- Pre-heat grill or grill pan to medium high heat then add the chicken and veggies to grill or grill pan
- Rotate meat and veggies every couple of minutes so that everything cooks evenly
- When veggies are tender, remove from heat
- When chicken is almost completely cooked through (after about 10-12 minutes), use a brush to spread the sauce over the chicken
- Rotate chicken and brush all sides with sauce
- Remove from grill and allow to rest for a few minutes before serving
- Next time I will double up sauce and leave some to put on table for dunking...It's that good!!!
