How to make it

  • In a small bowl combine mayo with Thai Sweet Chili Sauce and Sriracha Hot Sauce
  • Whisk together until smooth and set aside
  • Season the chicken and veggies separately with salt and pepper to taste, then drizzle with olive oil
  • Skewer the chicken, then skewer peppers and onions
  • Pre-heat grill or grill pan to medium high heat then add the chicken and veggies to grill or grill pan
  • Rotate meat and veggies every couple of minutes so that everything cooks evenly
  • When veggies are tender, remove from heat
  • When chicken is almost completely cooked through (after about 10-12 minutes), use a brush to spread the sauce over the chicken
  • Rotate chicken and brush all sides with sauce
  • Remove from grill and allow to rest for a few minutes before serving
  • Next time I will double up sauce and leave some to put on table for dunking...It's that good!!!
