Fresh Homemade Ricotta Recipe

When I was a kid, my mom used to use creamed cottage cheese in her lasagna rather than ricotta. When I asked why, she told me, because the crap they sell in the grocery store is not even close to real ricotta, cottage cheese is closer in taste and texture. Read more I didn't really understand what she meant, until when visiting Italy I tasted my first real fresh ricotta, so unlike the grainy Precious they sell. I've found fresh ricotta at some of the higher end markets, but then, being higher end, they also cost a lot. So I thought, why not just make it myself, I mean how hard can it be? As it turns out, not hard at all. You also have the added advantage when making your own, to make it firmer, or softer. In this case I was going for a small curd, soft sweet cheese to use with my Lindys Heirloom Tomato Jam to make a crostini. This recipe turned out perfect for that. If you wanted it thicker, you could drain it longer, or not so sweet, use more milk and less cream. You get to be the boss and the master of your own domaine! See less
