How to make it

  • In a double boiler, combine egg yolks, sugar and Grand Marnier.
  • Heat until sugar melts thoroughly.
  • In a separate pan, melt chocolate and coffee together.
  • Add butter a little at a time.
  • Mix thoroughly.
  • Beat egg whites until stiff.
  • Slowly add confectioners sugar while continuing to beat.
  • Combine egg yolk and chocolate mixtures and quickly into whites.
  • Mix thoroughly and pour into individual serving dishes.
  • Chill 2-4 hours immediately.
  • Serve.

    Hang onto the recipe, because the restaurant is gone. Ameristar Casino bought it and bulldozed it. Great view overlooking the river. The restaurant was just off I-20 and was sort of a tourist thing. Catfish was the big draw.

    I have had this recipe, out of an old cookbook, for years. It is smootha and divine. The kick of booze gives a nice little edge to the flavor but isn't too dominant.
