Chicken Cutlets With White Wine Sauce

- 2 tbsp extra virgin olive oil shopping list
- 4 chicken cutlets shopping list
- 1/2 cup flour shopping list
- 2 garlic cloves, minced shopping list
- 3/4 cup white wine (I used Pinot Noir) shopping list
- 1/2 cup chicken broth shopping list
- Squeeze fresh lemon juice shopping list
- 1/2 teas dried basil shopping list
- Small pinch of dried thyme shopping list
- 2 tbsp butter shopping list
- salt & freshly ground pepper (to taste) shopping list
- Fresh flat leaved parsley, chopped (optional) shopping list
How to make it
- Heat the olive oil in a skillet over medium heat. In a shallow bowl, add flour and salt & pepper, mix, dredge chicken cutlets in the seasoned flour, shake off extra, add to skillet. Brown on both sides, remove from pan.
- Add minced garlic to pan, saute for a minute or two, add white wine, bring to a boil, cook until reduced. Add chicken broth, lemon juice, basil & thyme, and butter. Stir to combine. Add chicken cutlets, cook until sauce slightly thickens and chicken is cooked through. Taste for correct seasoning, add salt & pepper to taste. Top with fresh chopped flat leaved parsley is you wish.
- This is delicious served with garlic mashed potatoes:)
