How to make it

  • Heat the olive oil in a skillet over medium heat. In a shallow bowl, add flour and salt & pepper, mix, dredge chicken cutlets in the seasoned flour, shake off extra, add to skillet. Brown on both sides, remove from pan.
  • Add minced garlic to pan, saute for a minute or two, add white wine, bring to a boil, cook until reduced. Add chicken broth, lemon juice, basil & thyme, and butter. Stir to combine. Add chicken cutlets, cook until sauce slightly thickens and chicken is cooked through. Taste for correct seasoning, add salt & pepper to taste. Top with fresh chopped flat leaved parsley is you wish.
  • This is delicious served with garlic mashed potatoes:)

    What can I say but "deeeelicious!!" I loved this! Loved the add of the lemon. I was going to skip it (getting lazy toward the end) but - don't skip the lemon! So easy, too. I cooked my cutlets for about 13 minutes after putting them back in the pan. A quick weeknight dish. Added my picture and more in MrP's thread in IMI. 5/2/13

    NP, I had to make this as soon as I saw it. This was excellent and easy for me. I used chardonnay for wine and fresh basil and thyme. I quadrupled the recipe and so glad I did.
