Rain Forest Bars

- 3/4 cup butter,softened ( no subs) shopping list
- 1/2 cup packed light brown sugar shopping list
- 1 egg yolk shopping list
- 1 tsp. vanilla extract shopping list
- 2 cups all-purpose flour shopping list
- 1 cup packed light brown sugar shopping list
- 3 eggs shopping list
- 1 tsp. vanilla extract shopping list
- 3 TBSP. all-purpose flour shopping list
- 1/4 tsp. salt shopping list
- 2 cups chopped brazil nuts ( or toasted walnuts,pecans) shopping list
- 1 cup shredded coconut( sweetened) shopping list
How to make it
- Preheat oven to 350 F.
- Beat butter in mixing bowl for 30 seconds. Add the
- Brown sugar and beat until combined.Scrape down sides
- Of bowl.Beat in egg yolk and vanilla till combined.
- Beat in the 2 cups flour till combined.Pat the dough
- Evenly into the bottom of a greased foil lined
- 9"x13" pan. Bake in a preheated oven for 10 minutes.
- Cool in pan on a wire rack for 5 minutes.
- Meanwhile, stir together the 1 cup brown sugar,eggs
- And 1 tsp.vanilla in a large bowl. Best at medium
- Speed until combined. Beat in the 3 TBSP. Flour and the salt until combined. Stir in the chopped nuts and coconut. Spread filling evenly over baked crust.
- Bake in 350 F. Oven for 20 more minutes or until
- Set. Cool in pan. Cut into bars. Cover and chill
- Leftovers.
- Also great with melted chocolate drizzled over the top.
