Le Petit Gourmet's Spinach Salad

- Salad shopping list
- 1 bag spinach (I now use a 5 oz. plastic tub of baby spinach, but you can just eyeball how much of the ingredients you need for the salad based on how many people you're cooking it for) shopping list
- 6 medium fresh white button mushrooms, washed and thinly sliced shopping list
- 1 small red onion, finely chopped shopping list
- 2 or 3 hard boiled eggs, chopped shopping list
- 4 tbsp. real bacon bits shopping list
- 1/2 cup croutons shopping list
- 1/2 cup grated cheddar cheese shopping list
- Creamy garlic and herb dressing shopping list
- 2 eggs shopping list
- 1/2 cup sour cream shopping list
- 1/4 cup of mayonnaise shopping list
- 1/2 cup olive oil shopping list
- 1-2 tbsp. Dijon mustard shopping list
- 1-2 cloves minced garlic shopping list
- 2 tbsp. finely chopped green onion shopping list
- 2 tbsp. red wine vinegar shopping list
- 1/4 tsp. marjoram shopping list
- 1/4 tsp. basil shopping list
- 1/2 tsp. tarragon shopping list
- 1/2 tsp. celery salt shopping list
- salt and pepper to taste shopping list
How to make it
- Combine all salad ingredients in a large salad bowl.
- To make the dressing - In a bowl, and using an electric mixer, combine all dressing ingredients and beat together. Pour into a glass jar and keep refrigerated. (Makes about 1 3/4 cups of dressing)
- Pour over salad and serve immediately.
