How to make it

  • Pre heat the oven to a medium heat and butter a baking dish. Set aside.
  • In a food processor mix milk, eggs, corn and butter for 2 minutes until you get a smooth cream.
  • Pour the corn cream into a large bowl and add the rest of the ingredients. Mix gently untill all is combined. Taste and add salt if needed.
  • Pour the mix into the baking dish.
  • Bake for about 40 minutes. It should set on the sides but if you insert a knife in the center it should be moist.

    This is DELICIOUS! I used about 1/2 cup Emmentaler cheese and 1/4 cup sharp cheddar (using up what I had on hand - I can think of any number of cheese combinations that would work in this!), and the only other change was to use some thyme as I was out of fresh parsley. Savory, creamy, a teeny bit sweet from the corn, smokey with little bits of spice from the chorizo....heaven! And I'm going to say this can be made a day ahead and reheated, as we had some for breakfast this morning and it was even more delicious! ;)

    Oh my gosh, this looks fabulous! Love the idea of adding the chorizo (would that be the same as Portuguese "chourico" ?)

    Wow, if this isn't comfort food that screams "come and get me" on a rainy day like today, then nothing is! I look forward to trying this. It seems like a very large dish for just 4 is it served as a main or side? I see in your your description it's a Main Dish. One more question: what size casserole dish does this go in?
