Soft Corn Casserole

- 2 cups milk shopping list
- 4 eggs shopping list
- 14oz canned corn, drained (you can use fresh corn) shopping list
- 4 tbsp butter, cut into cubes shopping list
- 3/4 cup grated cheese (I used cheddar and smoked wensleydale) shopping list
- 3/4 cup chorizo (I used half a portuguese smoked chorizo - boiled and cubed into bite size pieces) shopping list
- 2 tbsp finely chopped parsley shopping list
- 1 cup AP flour shopping list
- 2 tsp baking powder shopping list
- salt and pepper to taste shopping list
How to make it
- Pre heat the oven to a medium heat and butter a baking dish. Set aside.
- In a food processor mix milk, eggs, corn and butter for 2 minutes until you get a smooth cream.
- Pour the corn cream into a large bowl and add the rest of the ingredients. Mix gently untill all is combined. Taste and add salt if needed.
- Pour the mix into the baking dish.
- Bake for about 40 minutes. It should set on the sides but if you insert a knife in the center it should be moist.

Oh my gosh, this looks fabulous! Love the idea of adding the chorizo (would that be the same as Portuguese "chourico" ?)
