How to make it

  • In a large pot, cover the potatoes with water and bring to a boil. Cook over moderately high heat until tender, about 20 minutes. Drain the potatoes and return them to the pot. Shake the pot around for a few seconds to dry the potatoes. Let cool completely and cut into 1” pieces.
  • In a large bowl, blend the mayonnaise, relish, mustard paprika, chili powder, radishes and onion. Gently fold in the potatoes. Season to taste with salt. Refrigerate for at least 4 hours to chill.

    Oh this sounds just like the potato salad Rick said his Mom used to make! He loved her potato salad to say the least! Especially the addition of radishes:) Thanks for posting this gf, I'll have to make this for him here someday soon:)
